Blackened Salmon with Mango Salsa

Ingredients

  • 2 (6 oz.) Salmon fillets
  • All Natural Pam cooking spray
  • 1/4 tsp. salt
  • 1 Tbsp. blackened seasoning
  • Mango Salsa:
  • 1 large mango, peeled and coarsely chopped*
  • 1/4 cup finely chopped purple onion
  • 2 Tbsp. chopped fresh cilantro
  • 1 Tbsp. chopped fresh mint
  • 3 Tbsp. orange juice
  • 1 jalapeno pepper, seeded and minced
  • 1/4 tsp. ground cumin
  • 1/4 tsp. salt

Directions

  1. spray salmon fillets evenly with cooking spray for 5 seconds. Sprinkle salmon evenly with salt and blackened seasoning.
  2. Spray a large skillet with cooking spray for 2 seconds, and heat skillet over medium-high heat. Place salmon in skillet. Cook 4 to 6 minutes on each side or to desired degree of doneness. Serve immediately with Mango Salsa.
  3. Mango Salsa:

  4. Stir together all ingredients. Chill, if desired.

    • 1 cup chopped jarred mango may be substituted.
