Shrimp Puffs

Ingredients

  • 2 1/4 cups water
  • 3/4 lb. unpeeled, small fresh shrimp
  • 1/2 cup grated Parmesan cheese, divided
  • 1 (3 oz.) pkg. cream cheese, softened
  • 1/4 cup sour cream
  • 1 green onion, minced
  • 1/4 tsp. Cajun seasoning
  • Cream Puffs:
  • 3/4 cup water
  • 1/3 cup butter
  • 1/2 tsp. salt
  • 3/4 cup all-purpose flour
  • 3 large eggs

Directions

  1. Bring 2 1/4 cups water to a boil; add shrimp, and cool 3 to 5 minutes or just until shrimp turn pink. Drain and rinse with cold water. Peel shrimp, devein, if desired, and chop.
  2. Stir together 1/4 cup Parmesan, cream cheese, and next 3 ingredients; stir in shrimp.
  3. Cut off tops of Cream Puffs; remove any soft dough inside. Spoon shrimp mixture into puffs; replace tops, and place on baking sheets. Sprinkle with remaining Parmesan.
  4. Bake at 325 degrees for 10 to 15 minutes or until thoroughly heated.
  5. makes 2 dozen

  6. Note: To serve Shrimp Puffs chilled, omit baking. Cover and chill at least 1 hour. Sprinkle with Parmesan cheese before serving.

  7. Cream Puffs:

  8. Bring first 3 ingredients to a boil in a saucepan; reduce heat to low. Add flour; beat with a wooden spoon until mixture leaves sides of pan. Remove from heat. Add eggs, 1 at a time, beating until smooth after each. Drop by teaspoons onto buttered baking sheets.
  9. Bake at 40 degrees for 25 to 30 minutes or until lightly browned and puffed; transfer to wire racks to cool.
