Black Bean Wraps

Serves 12 people

Ingredients

  • 2 (8oz.) pkg. cream cheese, softened
  • 2 cups sour cream
  • 1 tsp. onion salt
  • 2 (15 oz.) cans black beans, rinsed and drained
  • 1/4 cup salsa
  • 12 (8-inch) flour tortillas
  • 1 (10oz.) pkg. fresh spinach
  • 2 (7oz.) jars roasted sweet red peppers, drained and coarsely chopped
  • 2 carrots, shredded (optional)

Directions

  1. Beat first 4 ingredients in a large bowl at medium speed with an electric mixer until thoroughly blended. Set cheese mixture aside.

  2. Process beans and salsa in a food processor until smooth, stopping to scrape down sides.

  3. Spread bean mixture evenly over tortillas; top each evenly with cheese mixture, spinach, peppers and, if desired, carrot. Roll tortillas tightly; wrap each in plastic wrap. Chill, if desired. Serve with salsa.

  4. Note: Black Bean Wraps may be prepared up to 4 hours ahead and chilled until ready to serve.
