Country Ham with Redeye Gravy

Ingredients

  • 2 cups hot strong brewed coffee
  • 1/4 cup firmly packed brown sugar
  • 1 lb. center-cut country ham slices

Directions

  1. Stir together coffee and sugar.

  2. Cook ham in a large cast-iron skillet over medium heat 5 minutes on each side or until browned. Remove ham; reserve drippings in skillet.

  3. Add coffee mixture to skillet, stirring to loosen particles from bottom; bring to a boil. Boil, stirring occasionally, until reduced by half (about 15 minutes). Serve with ham.
