Holiday Yams

Ingredients

  • 1/2 cup sugar
  • 1/2 cup firmly packed brown sugar
  • 12 Tbsp. cornstarch
  • 1/2 cup orange juice
  • 1/4 cup butter, melted
  • salt to taste
  • 4-5 medium yams or sweet potatoes, peeled and sliced

Directions

  1. In an unheated saucepan, combine sugars and cornstarch; blend well. Stir in orange juice, batter and salt. Simmer over low heat, stirring constantly until slightly thickened.
  2. Place yams in a lightly greased 2-quart casserole dish; add orange sauce and bake at 350 degrees for 30 minutes.
