Fluffy Rice and Chicken

Serves 4 people

Ingredients

  • 1 can cream of Mushroom soup
  • 1 soup can of milk
  • 3/4 c uncooked rice
  • 1 4 ounce can mushrooms
  • 1 envelope onion soup mix
  • 2 chicken breasts, 4 single serve breasts

Directions

  1. Heat oven to 350F. Mix soup and milk and reserve 1/2c of the mixture. mix remaining soup mixture with rice, mushrooms (with juice from can) and half the onion soup mix.

  2. Pour into ungreased baking dish. Place chicken breasts on top. Pour reserved soup mixture over chicken and sprinkle with remaining soup mix. Cover and bake 1 hour. Uncover and bake an additional 15 minutes.
