Spinach Meatballs with Tomato Sauce

Ingredients

  • 1 pkg frozen, chopped spinach
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1 1/2 lb ground beef
  • 3 T grated parmesan
  • 3 T bread crumbs
  • 1 egg
  • salt and pepper
  • 2T butter
  • 2 T flour
  • 1 c Big Batch Tomato Sauce
  • 1t worchestershire sauce
  • 1 c water

Directions

  1. Defrost spinach and squeeze dry. Combine all ingredients through salt and pepper. Form into small meatballs and bake at 500F for about 10 minutes.

  2. Sauce:

  3. Melt butter in a sauce pan, add flour and allow to cook. Add the tomato sauce and worchestershire sauce and allow to cook until thickened. Use the water to create the desired sauce thickness.

  4. Serve the meatballs with the sauce over pasta.
