Chocolate Souffle

Ingredients

  • 2 pkgs knox, unflavored gelatin
  • 2 c milk
  • 1 c sugar
  • 1/4 t salt
  • 4 eggs, separated
  • 12 ounces semisweet chocolate morsels
  • 1 t vanilla
  • 2 c whipped cream

Directions

  1. Sprinkle gelatin over milk in saucepan. Add 1/2 c sugar, salt and egg yolks; mix well. Add chocolate and cook over low heat, stirring constantly until gelatin is dissolved and chocolate is melted. Remove from heat and beat until chocolate is blended. Stir in vanilla. Chill, stirring occasionally until mixture mounds slightly when dropped from spoon, approximately 20 minutes.

  2. Beat egg whites until stiff, gradually add 1/2 c sugar and beat until very stiff. Fold into chocolate mixture. Fold in whipped cream. Turn into 2 quart dish. Chill until firm.
