Iced Pears Sauternes

Ingredients

  • 4 pears
  • 2 cups sauternes wine
  • 1 1/3 cups sugar
  • 2 Tbsp. lemon juice
  • 6 egg yolks
  • 1 pint vanilla ice cream

Directions

  1. Pare and core pears. In heavy saucepan, combine 1 cup wine and 3/4 cup sugar. Bring to boil and continue cooking for 5 minutes. Add lemon juice and pears. Cook for 10 minutes. Chill pears in cooking liquid. In small saucepan, heat remaining wine. Bring to boil and cook for 20 minutes, or until wine is reduced to 1/2 cup.
  2. In top of double boiler, combine egg yolks and remaining sugar. Beat until creamy. Add reduced wine. Cook, beating constantly, for 10 minutes until smooth and beginning to thicken.
  3. In serving bowl, place layer of ice cream. Drain pears and arrange on top of ice cream. Serve with wine sauce on the side.
