Italian Strawberry Ice Cream

Ingredients

  • 2 lb. strawberries, hulled and halved
  • Pinch ground cardamom
  • 1 1/3 cups granulated sugar
  • 2 cups heavy cream
  • 1/2 cup whole milk

Directions

  1. In a saucepan, combine the strawberries, cardamom and sugar and bring to a boil. Simmer 10 to 15 minute, or until the fruit has softened.
  2. Pass the mixture through a fine sieve and return liquid to the saucepan. You should have about 2 cups of puree. Any extra should be reserved for another use. Add the cream and milk and stir to combine. Cover and refrigerate until well chilled.
  3. Transfer to the canister of an ice cream maker and freeze according to manufacturer’s
  4. instructions.
