Chicken Noodle Soup with Homemade Noodles

Ingredients

  • 1-1 1/2 lb chicken breasts cut into bite sized pieces
  • 2-3 onions chopped for a soup
  • 2-3 carrots chopped for a soup
  • flour
  • paprika
  • salt and pepper
  • seasonings
  • butter for browning
  • 8 c chicken broth
  • 2 c flour
  • 2 eggs
  • pinch of salt

Directions

  1. Mix flour with salt, pepper, paprika and any other seasonings you choose. Coat chicken with flour and brown in butter. Remove to a plate.

  2. Saute onions and carrots until softened. Return chicken to the pot and add with 8 cups chicken broth. Simmer until everything is tender.

  3. In a food processor, mixer or by hand mix the flour, eggs and salt with water until good consistency for making noodles. Cut into chunks. Roll out and cut by hand or use a noodle maker. Add to gently boiling soup.
