Peach Pops

Ingredients

  • 2 ripe medium peaches or nectarines
  • 2 Tbsp. lemon juice
  • 1/2 cup sugar
  • 1/2 tsp. almond extract
  • 1 plastic popsicle mold

Directions

  1. Peel fruit. Halve and remove pits. Quarter the fruit and place in a blender with lemon juice and almond extract. Blend until pureed then set aside in refrigerator. Combine 1/2 cup water and sugar, and bring to a boil. Simmer for 5 minutes and allow to cool. Place in a blender with fruit and blend until well mixed. Pour mixture into plastic popsicle mold and insert popsicle tops or sticks. To serve, turn tray upside down and run under hot water for a few seconds until the popsicles slide out easily.
