Peanutty Banana Squares

Ingredients

  • 1 1/2 Tbsp. sugar
  • 2 Tbsp. banana liqueur, optional
  • 1/2 cup heavy or whipping cream, whipped
  • 1/3 cup chunky peanut butter
  • 1/4 cup Hot Fudge Sauce
  • 1 pt. Banana Ice Cream
  • 1 1/2 cups Chocolate Chip Ice Cream
  • 1 cup crushed peanut brittle

Directions

  1. Fold sugar (and liqueur, if used) into whipped cream. Refrigerate. Blend peanut butter and hot fudge. Working quickly, spread Banana Ice Cream evenly in an 8 inch square pan. With knife, mark off 9 squares, 3 across and 3 down. With back of spoon, make an indentation in center of each square. Spoon 1 Tbsp. of peanut butter-fudge
  2. mixture into each indentation. Sprinkle 1/2 cup crusted peanut brittle around indentations/ Spread Chocolate Chip Ice Cream over all; gently press down to level top. Swirl whipped cream over all; gently press down to level top. Swirl whipped cream mixture over top; sprinkle with remaining crushed peanut brittle. (Peanut butter-fudge filling will be centered in each square.) Freeze until firm, about 3 hours. To serve, cut into 9 squares.
