Pumpkin Ice Cream Sqaures

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 2 cups cooked pumpkin puree
  • 1/2 cup firmly packed dark brown sugar
  • 1/2 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground ginger
  • 1/4 tsp. ground cloves
  • 1 quart vanilla cream, softened
  • Cocoa, optional

Directions

  1. In a small bowl, mix crumbs with granulated sugar and butter. Press into 9-inch square pan.
  2. In a medium bowl, combine pumpkin, brown sugar, salt, cinnamon, ginger and cloves. Fold in softened ice cream. Spread in crumb-lined pan. Cover and freeze until firm.
  3. Cut into 3 by 3 inch squares; serve on chilled plates. If desired, sift cocoa through a decorative template over each square.
