Rhubarb Snow

Ingredients

  • 1 lb. rhubarb
  • 1/2 cup sugar
  • 1/4 cup water
  • 3 egg whites, beaten stiff

Directions

  1. Stew rhubarb in sugar and water until pureed. Chill. Fold into egg whites and serve in parfait glasses.
