Strawberry Frost

Ingredients

  • 1/2 cup butter
  • 1 cup all-purpose flour
  • 1/4 cup firmly packed brown sugar
  • 1/2 cup finely chopped pecans
  • 2 egg whites
  • 1 (10oz.) pkg. frozen sliced strawberries, slightly thawed
  • 2/3 cup sugar
  • 2 Tbsp. lemon juice
  • 1 cup whipping cream
  • !hole fresh strawberries (optional)

Directions

  1. Melt butter in a 13 × 9 × 2 inch baking pan. Add flour, brown sugar, and pecans; mix well. pat out evenly in pan. Bake at 350 degrees for 10 minutes. Stir and bake 10 minutes longer. Cool; remove one-third of crumbs for topping. Pat remaining crumbs smoothly in pan.
  2. Beat egg whites, sliced strawberries, sugar and lemon juice on high speed of an electric mixer for 15 minutes.
  3. Beat whipping cream until light and fluffy; fold into strawberry mixture. Spread mixture over crust in pan, and sprinkle with remaining crumbs.
  4. Cover tightly with aluminum foil and freeze. Cut into squares, and garnish with whole strawberries, if desired.
