Strawberry- Passion Fruit Sorbet

Passion fruit is available from early spring to early fall in Latin markets and some supermarkets. Select large, heavy, firm fruit that is a deep purple.

Ingredients

  • 2 passion fruit
  • 3 cups sliced fresh strawberries
  • 2 cups champagne
  • 2/3 cup sugar1 Tbsp. lemon juice
  • Garnishes: fresh strawberries, fresh mint springs

Directions

  1. Cut passion fruit in half lengthwise; scoop pulp and seeds from 1 fruit into a blender or food processor. Add half each of strawberries and next 3 ingredients, and process until smooth.
  2. Pour into freezer container of an electric freezer. Repeat procedure with remaining ingredients; freeze according to manufacturer’s instructions. Serve immediately, or freeze in an airtight container up to 8 hours. Garnish, if desired.
