Strawberry-Vanilla Cream

Ingredients

  • 1 cup all-purpose flour
  • Sugar
  • 2/3 cup butter or margarine, softened
  • 1 pkg. (3 1/4 oz.) vanilla instant pudding
  • 1 3/4 cups milk
  • 1 envelope unflavored gelatin
  • 1 pkg. (10 oz.) frozen strawberries, thawed
  • Juice of 1/2 lemon
  • 1 cup heavy cream, whipped
  • Additional whipped cream
  • Fresh strawberries

Directions

  1. Mix flour and 1/4 cup sugar, then cut in butter until mixture is consistency of fine meal. Pat evenly on bottom of 13 × 9 × 2 inch baking pan.
  2. Bake in preheated 350 degrees oven, 12 to 15 minutes, or until lightly browned; cool. Prepare pudding a directed on package, using 1 3/4 cups milk. Spread pudding on crust. Soften gelatin in 1/4 cup cold water 5 minutes, then dissolve in 1/2 cup boiling water. Chill until slightly thickened, then beat until frothy. Combine berries, 1/3 cup sugar and the lemon juice and stir into gelatin. Fold in 1 cup cream, whipped and spread on pudding. Chill until set. Cut in squares and serve with whipped cream and fresh strawberries.
