Cucumber- Yogurt Spread

serve on soft rolls with grilled chicken, sliced turkey, or fresh tomato slices.

Ingredients

  • 1 (16oz.) container plain nonfat yogurt
  • 2 small cucumbers, peeled, seeded, and finely chopped
  • 2 garlic cloves, pressed
  • 6 small mint leaves, minced
  • fresh mint sprigs

Directions

  1. Line a mesh strainer with a paper coffee filter. Spoon yogurt into filter, and place strainer over a bowl. Cover with plastic wrap, and chill 24 hours.
  2. Spoon yogurt into bowl, discarding liquid (yogurt will have a very thick consistency). Stir in chopped cucumber and next 4 ingredients. Cover and chill up to 3 days. Garnish, if desired.
