Roasted Onion Guacamole

Ingredients

  • 1 large purple onion, chopped
  • 2 garlic cloves, chopped
  • 2 Tbsp. balsamic vinegar
  • 1 Tbsp. olive oil
  • 4 small California Avocados, peeled
  • 1 Tbsp. lemon juice
  • 1/2 tsp. salt
  • 1/2 tsp. dried Italian seasoning
  • Tortilla chips

Directions

  1. Toss together first 4 ingredients, and place on an aluminum foil-lined pan.
  2. Bake at 425 degrees for 25 to 30 minutes or until lightly browned, stirring once. Cool.
  3. Mash avocados in a medium bowl; stir in onion mixture, lemon juice, salt and Italian seasoning. Chill 1 hour. Serve with chips.
