Shrimp Rounds

Ingredients

  • 2 1/4 cups water
  • 3/4 lb. unpeeled, medium-size fresh shrimp
  • 18 (1/4 to 1/2-inch thick) baguette slices
  • 1/2 cup (2 oz.) shredded Cheddar cheese
  • 2 Tbsp. minced celery
  • 1 Tbsp. minced onion
  • 2 Tbsp. mayonnaise
  • 1 tsp. chopped fresh dill
  • 1/8 tsp. salt
  • Dash of ground pepper
  • Garnish: fresh dill sprigs

Directions

  1. Bring 2 1/4 cups water to a boil in a large saucepan; add shrimp, and cook 3 to 5 minutes or just until shrimp turn pink. Drain and rinse with cold water.
  2. Peel shrimp; devein, if desired. Cut 9 shrimp in half lengthwise; set aside. Dice remaining shrimp.
  3. Bake baguette slices on a baking sheet at 350 degrees for 5 to 10 minutes or until lightly toasted.
  4. Stir together diced shrimp, cheese, and next 6 ingredients; spread on baguette slices.
  5. Bake at 350 degrees for 5 minutes or until lightly browned. Top each with a shrimp half; garnish, if desired.
