Stacked BBQ Pulled Pork Nachos

Ingredients

  • 8 (10 or 12 inch) flour tortillas or prepared tortilla chips
  • 1 Tbsp. olive oil
  • 1/4 tsp. salt
  • 1 1/2 cup frozen fajita peppers and onions
  • 1 1/2 cup refrigerated pulled pork barbecue
  • 2 cups shredded Mexican blend cheese
  • 3 Tbsp. bottled barbecue sauce, warmed

Directions

  1. Preheat oven to 425 degrees.
  2. Cut flour tortillas into triangles and toss with olive oil and salt. Spread in an even layer on a baking sheet. Bake 5 to 7 minutes, until browned and crisp.
  3. Heat a large, heavy skillet over medium-high heat. Add peppers and onions and cook, stirring, until vegetables begin to char slightly, about 5 minutes.
  4. Heat barbecue sauce in the microwave in a small bowl.
  5. Lay chips in the bottom of a baking dish and layer on pork, peppers and onions, and cheese. Repeat layers, ending with cheese. Bake 5 to 7 minutes, until cheese is melted.
  6. Drizzle with warmed sauce and top with sour cream, sliced jalapenos, chopped green onions and chopped tomatoes.
