Tapenade

classic olive spread for grilled fish, or vegetables on sliced focaccia

Ingredients

  • 1 (6oz.) jar pitted kalamata olives, drained
  • 1 anchovy fillet, rinsed
  • 2 garlic cloves, chopped
  • 1 small shallot, chopped
  • 1 tsp. capers
  • 1/4 cup olive oil
  • 1 Tbsp. lemon juice
  • 1 Tbsp. chopped fresh parsley
  • Garnish: olives, lemon slice, fresh parsley

Directions

  1. Process first 5 ingredients in a food processor until smooth. With processor running, pour oil through food chute, stopping to scrape down sides. Stir in lemon juice and chopped parsley. Garnish, if desired.
