Marinated Strawberries with Frozen Yogurt

Ingredients

  • 4 cups strawberries
  • 2 Tbsp. sugar
  • 2 Tbsp. aged balsamic vinegar
  • 2 Tbsp. finely snipped fresh mint
  • 1 Tbsp. lemon juice
  • 3 cups low-fat or far-free vanilla frozen yogurt
  • Fresh mint sprigs (optional)

Directions

  1. Remove stems from the strawberries; halve or quarter any large berries lengthwise. Combine the strawberries, sugar, balsamic vinegar, mint, and lemon juice in a medium mixing bowl.
  2. Cover and refrigerate for at least 20 minutes or up to 4 hours. To serve, spoon the marinated strawberry mixture over scoops of frozen yogurt, if desired, garnished with fresh mint sprigs.
