mexican Drumsticks

Serves 4 people

Ingredients

  • 1 14 1/2 oz. can diced tomatoes, undrained
  • 1 medium onion, chopped 9about 1/2 cup)
  • 3 to 4 garlic cloves, halved
  • 1 Tbsp. chili powder
  • 1 1/2 tsp. sugar
  • 1 tsp. ground cumin
  • 8 chicken drumsticks (skin removed, if desired)
  • 1 Tbsp. lime juice
  • peasant-style White Beans and Rice (optional)
  • Lemon or lime wedges (optional)

Directions

  1. Combine tomatoes, onion, garlic, chili powder, sugar and cumin in a large skillet.
  2. Add chicken. Bring to boiling; reduce heat. Simmer, covered, 45 minutes or until chicken is very tender, turning drumsticks once to coat with tomato mixture.
  3. Remove chicken, place in a shallow serving bowl. Stir lime juice into tomato mixture and spoon over chicken. Serve with Peasant-Style White Beans and rice and lemon or lime wedges, if desired.
