Sausage and Apple Stuffing

Ingredients

  • 1 Tsp. olive oil
  • 4 links sweet Italian sausage casings removed (about 1 lb.)
  • 3 ribs celery, thinly chopped
  • 2 medium onions, chopped
  • 2 tart apples (such as Granny Smith or Pink Lady) cored and chopped
  • 1/4 cup chopped fresh sage
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 large baguette (about 3/4 lb.) cut into 3/4-inch pieces (about 7 cups)
  • 3 cups low-sodium chicken broth
  • 2 large eggs, beaten

Directions

  1. heat oven to 375 degrees. Lightly grease a shallow 3-quart baking dish. In a large skillet, heat oil over medium-high heat. Add sausage and cook, breaking it up with a spoon, until browned, 6 to 8 minutes. Using a slotted spoon, transfer sausage to a large bowl.
  2. To drippings in skillet, add celery, onions, apples, sage, salt and pepper. Cook, tossing frequently, until vegetables are tender, 7 to 9 minutes.
  3. Add vegetable mixture, baguette, broth and eggs to sausage, toss to combine. Transfer to prepared baking dish; cover with foil.
  4. Bake stuffing for 20 minutes. Remove foil and bake until browned, 20 to 30 minutes more.
