Green Chile- Pimiento Cheese

Ingredients

  • 2 (8oz.) blocks extra sharp cheddar cheese, shredded
  • 1 (8oz.) block Monterey jack cheese with peppers, shredded
  • 1 cup mayonnaise
  • 1 (4.5oz.) can chopped green chiles
  • 1 (4oz.) jar diced pimiento, drained
  • 1 medium poblano chile pepper, seeded and minced
  • 1/4 small sweet onion, minced
  • 2 tsp. Worcestershire sauce

Directions

  1. Stir together all ingredients in a large bowl.
  2. makes about 6 cups

  3. Note: Spread 1/2 cup cheese mixture on 6 to 8 whole grain bread slices; top with bread slices. Trim crusts, and cut sandwiches lengthwise into thirds. Reserve remaining cheese for other uses.
