Bloody Mary Beef Chili

Ingredients

  • 1 Tbsp. canola oil
  • 1 large onion, chopped
  • 1 1/2 lbs. very lean ground beef OR finely diced flatiron or sirloin steak
  • 2 cups favorite Bloody Mary mix (spicy preferred)
  • 2 (14oz.) diced tomatoes with green chiles
  • 2 (14 oz.) kidney beans, drained and rinsed
  • 4 Tbsp. favorite chili seasoning, divided use
  • Corn chips, shredded cheese
  • sliced green onions and/or sour cream, for garnish

Directions

  1. In a medium pot, heat the oil. Add the onion and sauté about 8 minutes until it becomes lightly golden brown. Add the beef and cook until it browns, breaking it up as it cooks. Stir in the Bloody Mary mix and heat on medium high, stirring and scraping up any browned bits on the bottom of the pan.
  2. Add the tomatoes, beans and 2 Tbsp. of the chili seasoning. Stir well. Bring to just a boil and reduce the heat to a simmer. Cover slightly and simmer 30 minutes.
  3. Just before serving, stir in the remaining 2 Tbsp. of chili seasoning. Serve with desired toppings.
