Corn and Bean Soup

Ingredients

  • 2 Tsp. olive oil
  • 1/2 cup chopped onion
  • 1 tsp. cumin
  • 1 tsp. minced garlic
  • 1/2 tsp. dried oregano
  • 1 cup frozen corn
  • 1/4 tsp. black pepper
  • 1 (14 oz.) can vegetable broth
  • 1 (15 to 19 oz.) can black beans, rinsed
  • 1 (14 1/2 oz.) can diced tomatoes and green chiles with liquid
  • Lime slices for garnish

Directions

  1. Heat olive oil in a large pot over medium-high heat. Add onion, cumin, garlic and oregano; cook 1 1/2 minutes. Stir in corn, pepper, broth, beans and tomatoes with liquid; bring to boil. Reduce heat; simmer 10 minutes.
  2. Serve with lime slices.
  3. makes about 5 cups
