Burgundy and Wild Cremini Mushroom Pilaf

Ingredients

  • 2 tbsp vegetable oil
  • 2 cups converted long grain white rice
  • 1 medium onion, chopped
  • 1 cup sliced cremini mushrooms
  • 1 small zucchini, thinly sliced
  • 3 1/2 cups beef broth
  • 1/2 cup burgundy wine
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 stick butter, melted

Directions

  1. Heat oil in skillet over medium heat. Add rice, onion, mushrooms and zucchini. Cook at stir 4-5 minutes until rice is slightly browned and onions are soft. Transfer to crock pot.

  2. Add broth, burgundy, salt and pepper. Drizzle with melted butter. Stir once. Cover and cook on LOW 6-8 hours.
