Broccoli Cheese Soup

Serves 4 people

Ingredients

  • 3 cups vegetable stock
  • 4 cups broccoli florets, chopped
  • 1 cup onion, chopped
  • 1 carrot, chopped
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 3 minced garlic cloves
  • 3 oz. half-and-half
  • 4 oz. shredded, reduced fat cheddar cheese
  • 1/4 cup parsley (optional)

Directions

  1. Combine vegetable stock, broccoli, onion, carrot, salt, pepper and garlic in large saucepan and bring to a boil. Reduce heat and simmer until broccoli is tender.
  2. Turn off heat. Mix soup with hand blender (or pour into blender) until smooth. Immediately stir in creamer, cheese and parsley, then serve.
