Black Bean Salad

Ingredients

  • 2 Tbsp. orange juice
  • 2 Tbsp. lemon juice
  • 2 tsp. olive oil
  • 1/2 tsp. salt
  • 1/2 tsp. ground cumin
  • 1/2 tsp. hot sauce
  • 2 (15 oz.) cans black beans, rinsed and drained
  • 1 cup cooked long-grain white rice
  • 3 plum tomatoes, seeded and chopped
  • 1 red bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • 1/2 small purple onion, chopped
  • 2 green onions, sliced
  • 1 celery rib, diced

Directions

  1. Whisk together first 6 ingredients in a large bowl; add beans and remaining ingredients, tossing gently to coat. Cover and chill at least 1 hour.
