Black Bean-and-Rice Salad

Ingredients

  • 1/2 cup canola oil
  • 1/4 cup lime juice
  • 2 cups canned black beans, rinsed and drained
  • 2 cups cooked long-grain rice
  • 1/2 cup chopped onion
  • 1/4 cup chopped fresh cilantro
  • 1 (4oz.) jar diced pimiento, drained
  • 2 garlic cloves, pressed
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Directions

  1. Whisk together oil and lime juice in a large bowl.
  2. Add remaining ingredients, and toss mixture to coat. Cover and chill salad for 2 hours.
