Black-and-Blue Salad

Serves 6 people

Ingredients

  • 4 skinned and boned chicken breast halves
  • Cooking spray
  • 1/4 cup salt-free Cajun seasoning
  • 2 (6 oz.) pkg. mixed salad greens
  • 2 purple onion slices, chopped
  • 1 large tomato, cut into wedges
  • 16 pepperoncini peppers
  • Low-Fat Blue Cheese Dressing:
  • 1 (12 oz.) container low-fat cottage cheese
  • 1/2 cup nonfat mayonnaise
  • 1/2 cup nonfat buttermilk
  • 1 (4oz.) pkg. crumbled blue cheese
  • 1 Tbsp. red wine vinegar
  • 2 tsp. Worcestershire sauce
  • 1 tsp. hot sauce

Directions

  1. Spray chicken with cooking spray for 5 seconds. Coat chicken evenly with Cajun seasoning.
  2. Spray a large skillet with cooking spray for 2 seconds, and heat skillet over medium-high heat. Add seasoned chicken, and cook 4 minutes on each side. Remove chicken from skillet, and cut into thin strips.
  3. Toss together salad greens and next 3 ingredients in a large bowl; top with chicken strips, and serve with Low-Fat Blue Cheese Dressing and pita chips, if desired.
  4. For Dressing:

  5. Whisk together all ingredients. Chill, if desired.
