Ingredients

  • 4 cups low-fat or whole-milk plain yogurt (see note)
  • salt

Directions

  1. Combine 4 cups whole-milk or low-fat plain yogurt and a generous pinch of salt and mix well. Line a fine-mesh sieve with several layers of cheesecloth. Strain yogurt in the prepared sieve for 36 to 48 hours in the refrigerator. Labneh will keep, refrigerated, in am airtight container for about a week.
  2. makes 3 to 3 cups

  3. Note: be sure to use a yogurt that does not contain any additives or stabilizers.

  4. Use to stuff peppers, as a base for dip, or as a spread
