Herbed Potto Salad

Ingredients

  • 8 medium potatoes, peeled and cubed
  • 1 cup light mayonnaise dressing or salad dressing
  • 1/4 cup milk
  • 1/4 cup chopped onion
  • 1/3 cup chopped green onion
  • 2 tsp. snipped fresh rosemary, crushed
  • 2 tsp. snipped fresh lemon thyme or 1/2 tsp. dried thyme, crushed
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • snipped Italian parsley

Directions

  1. Cook potatoes in a large saucepan in lightly salted boiling water for 7 to 8 minutes or until tender. Drain; transfer to bowl. Cover; refrigerate for 1 hour.
  2. Combine dressing, milk, onions, rosemary, thyme, salt, and pepper in a bowl. Pour over potatoes; toss to coat. Cover; chill 2 hours. Sprinkle with parsley before serving.
