Marinated Garden Salad

Serves 6 people

Ingredients

  • 3 medium tomatoes
  • 1 green bell pepper
  • 1 small purple onion
  • 1 medium cucumber
  • 1 cup Kalamata olives
  • 1/4 cup olive oil
  • 2 Tbsp. red wine vinegar
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. dried oregano
  • 2 (4oz.) pkg. crumbles feta cheese
  • 1 (2oz.) can anchovies, drained (optional)
  • lettuce leaves (optional)

Directions

  1. Cut each tomato into 8 wedges. Slice bell pepper and onion into rings. Peel and slice cucumber. Combine tomato, bell pepper, onion, cucumber, and olives.
  2. Whisk together oil and next 4 ingredients; drizzle over vegetables, and toss. Serve immediately, or cover and chill 1 hour. Sprinkle with cheese; top with anchovies, if desired. Serve on lettuce leaves, if desired.
