Marinated Green Bean-and-Okra Salad with Feta

Ingredients

  • 1 1/2 lbs. fresh green beans, trimmed
  • 1 1/2 lb. small fresh okra
  • 1/4 cup olive oil
  • 6 Tbsp. white wine vinegar
  • 1 Tbsp. chopped fresh basil
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. ground mustard
  • 1/4 cup crumbled feta cheese

Directions

  1. Cook beans and okra in boiling water to cover 3 minutes. Plunge beans into ice water to stop the cooking process; drain.
  2. Whisk together olive oil and next 5 ingredients; pour over beans and okra. Cover and chill 3 hours. Sprinkle with cheese.
