Rice Primavera Salad

Ingredients

  • 2 zucchini
  • 2 yellow squash
  • 1 large red bell pepper, chopped
  • 1 medium purple onion, chopped
  • 8 cups cooked long-grain rice
  • 3/4 cup mayonnaise
  • 1/3 cup buttermilk
  • 2 Tbsp. Dijon mustard
  • 2 Tbsp. white vinegar
  • 1 1/2 tsp. salt
  • 1/2 tsp. pepper

Directions

  1. Cut zucchini and yellow squash in half lengthwise; cut into slices.
  2. Stir together vegetables, rice, and remaining ingredients; cover and chill 8 hours.
