Summer Vegetable-and-Orzo Salad

Ingredients

  • 1 medium sweet onion, chopped
  • 3 Tbsp. olive oil
  • 1 cup orzo, cooked
  • 4 large carrots, coarsely shredded
  • 1 large red bell pepper, chopped
  • 1 large zucchini chopped
  • 3 to 4 Tbsp. white balsamic vinegar *
  • 2 Tbsp. honey
  • 3/4 tsp. salt
  • 1/2 tsp. freshly ground pepper
  • Lettuce leaves (optional)

Directions

  1. Saute onion in 1 Tbsp. oil 10 minutes or until browned. Remove from heat, and stir in orzo, remaining 2 Tbsp. oil, carrot and next 6 ingredients. Cover and chill at least 2 hours.
    • White wine vinegar may be substituted for white balsamic vinegar.
