Vegetable Salad

Serves 4 people

Ingredients

  • 1 small zucchini
  • 1/2 small purple onion
  • 1 small red bell pepper
  • 1 medium tomato
  • 1 small jalapeno pepper
  • 1 ear fresh corn
  • 1/4 cup Ranch dressing
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 large yellow bell peppers

Directions

  1. Cut zucchini in half; thinly slice zucchini, onion, and red bell pepper. Seed and chop tomato; seed jalapeno, and cut into thin strips.
  2. Cut corn from cob into a bowl; add zucchini, onion, red bell pepper, tomato, jalapeno, Ranch dressing, salt, and pepper, tossing to coat. Cover and chill at least 4 hours.
  3. Cut yellow bell peppers in half lengthwise; discard seeds and membrane. Stuff shells with vegetable mixture.
