Penne Pasta Zuppa

Ingredients

  • 15 oz can white beans, rinsed and drained
  • 1/4 lb fresh green beans, diced
  • 2 medium yellow squash, diced
  • 2 fresh sage leaves
  • 1 tsp salt
  • 2 tomatoes, diced
  • 1/2 tsp black pepper
  • 2 small red potatoes, cubed
  • 8 cups water
  • 2 leeks, sliced lengthwise into quarters and chopped
  • 1/4 lb uncooked penne
  • Grated Romano
  • 1 carrot, peeled and diced

Directions

  1. Combine beans, squash, tomatoes, potatoes, leeks, carrots, green beans, sage, salt and pepper in crock pot. Add water. Stir well. Cover and cook on HIGH 2 hrs, stirring occasionally. Turn crock pot to LOW. Cover and cook 8 hrs. Stir occasionally.

  2. Turn crock pot to HIGH. Add pasta. Cover and cook 30 minutes.

  3. Garnish with Romano cheese.
