Chicken Gumbo over Rice

Ingredients

  • 4 tbsp olive oil
  • 2 tbsp minced jalapeno
  • 1/2 lb Italian sausage, cut into 1/4-inch slices
  • 1 tsp paprika
  • 1/4 cup flour
  • 1 1/2 cups frozen okra
  • 1 cup chicken broth
  • 1 lb chicken breasts, cut into 1/2-inch slices
  • 1/2 cup white wine
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup diced green pepper
  • 2 cups cooked rice

Directions

  1. Heat 2 tbsp oil in skillet over medium. Brown sausage. Transfer to a paper towel-lined plate with slotted spoon.

  2. Heat remaining 2 tbsp oil in skillet. Whisk in flour. Cook until flour is dark brown. Add chicken, onions, peppers, celery, jalapeno, and paprika. Cook 7-8 minutes. Transfer to crock pot.

  3. Add sausage, okra, broth and wine. Cover and cook on LOW 7-8 hrs. Serve over rice.
