Original Nilla Banana Pudding

Ingredients

  • 3/4 cup sugar, divided
  • 1/3 cup all purpose flour
  • dash salt
  • 3 eggs, separated
  • 2 cup milk
  • 1/2 tsp. vanilla extract
  • 35 Nilla wafers
  • 5 ripe bananas, sliced

Directions

  1. Mix 1.2 cup sugar, flour and salt in top of double boiler; stir in egg yolks and milk. Cook and stir over boiling water until thickened, about 10 minutes; stir in vanilla.

  2. Spread 1/2 cup custard in 1 1/2 quart casseroles, top with a layer of Nillas and bananas. Top with 1/3 of the custard. Layer Nillas, bananas and custard two more times.
  3. Beat egg whites until soft peaks form; add remaining 1/4 cup sugar and heat until stiff. Spread over pudding, sealing to edge.
  4. Bake at 350 degrees 15 to 20 minutes. Serve warm or cold.
