Baked Rice Pudding

Indian-style rice pudding

Ingredients

  • 3 egg whites
  • 1 egg
  • 1 1/2 cups fat-free milk
  • 1/4 cup sugar
  • 1 tsp. vanilla
  • 2/3 cup cooked rice
  • 2 Tbsp. snipped dried apricots and/. or golden raisins
  • 1/4 tsp. ground cardamom
  • 1/4 tsp. finely shredded orange peel (optional)
  • Snipped dried apricots

Directions

  1. Preheat oven to 325 degrees. Combine egg whites, egg, milk, sugar, and vanilla in a mixing bowl. Beat with a fork until combined but not foamy. Stir in cooked rice; the 2 Tbsp. apricots and/ or raisins; the cardamom; and, if desired, the orange peel. Place five oven safe 6 oz. custard cups or soufflé dishes in a large shallow baking dish. Place baking dish on an oven rack. Pour boiling water into the baking dish around custard cups to a depth of 1 inch.
  2. Bake, uncovered, 40 minutes or until just set, stirring after 20 minutes. Serve warm or chilled. Garnish with the snipped dried apricots.
