Mint Chocolate Pudding Fudge

Ingredients

  • 2 pkg. (4oz. each) Baker's Semi-Sweet Chocolate, divided
  • 1/2 cup butter or margarine, divided
  • 1/2 cup water
  • 1 tsp. peppermint extract
  • 1 pkg. (3.9oz,) Jell-O Chocolate flavor instant pudding
  • 3 cups powdered sugar
  • 2/3 cups miniature marshmallows
  • 1/3 cup finely crushed starlight mints

Directions

  1. Line 8-inch square pan with foil, with ends of foil extending over sides. Microwave 4 oz. chocolate, 6 Tbsp. butter and water in large microwavable bowl on high 2 minutes or until butter is melted, stir until chocolate is completely melted and mixture is well blended. Add peppermint extract and dry pudding mix; stir 2 minutes.
  2. Add sugar, 1 cup at a time, stirring after each addition until well blended. Pour into prepared pan; press into even layer with back of spatula.
  3. Microwave remaining butter and chocolate in large microwaveable bowl 1 1/2 minutes or until butter is melted, stir until chocolate is completely melted and mixture is well blended. Pour over fudge layer in pan, spread to completely cover bottom layer. Top with remaining ingredients.
  4. Refrigerate 2 hours or until firm. use foil handles to remove from pan before cutting to serve.
  5. Substitute: Prepare using mint extract or Andes candy pieces.
