Blackened Catfish

Ingredients

  • 6 catfish fillets
  • 2 Tbsp. paprika
  • 2 1/2 tsp. salt
  • 1 tsp. onion powder
  • 1 1/2 tsp. cayenne pepper
  • 2 tsp. lemon pepper marinade
  • 1 tsp. ground thyme
  • 1 1/2 tsp. basil
  • 1 cup (2 sticks) unsalted butter, melted
  • lemon wedges

Directions

  1. Heat a large cast iron skillet over high heat until a drop of water sizzles in the pan, about 10 minutes. In a small bowl, combine paprika, salt, onion powder, garlic powder, cayenne pepper, lemon pepper marinade, thyme and basil. Keep fillets refrigerated until ready to use. Dip each fillet in melted butter so that both sides are well coated. Sprinkle seasoning mix on both sides. Place seasoned fillets on waxed paper while preparing other fillets. Place 3 fillets in the hot skillet, drizzle each with 1 Tbsp. of melted butter. There will be a lot of smoke; kitchen should be well ventilated. cook quickly, about 2 minutes per side. Remove to a warm platter. Repeat cooking process with remaining fillets. Serve immediately with lemon wedges.
