Chicken and Chile Pepper Stew

Ingredients

  • 1 lb chicken breasts, cut into 1/2-inch pieces
  • 3 garlic cloves, minced
  • 3 cups chicken broth
  • 1 lb small potatoes, cut lengthwise into halves, then crosswise into slices
  • 14 oz can diced tomatoes
  • 1 cup chopped onion
  • 2 poblano peppers, seeded and cut into 1/2-inch pieces
  • 1 jalapeno, seeded and finely chopped
  • 2 tbsp chili powder
  • 1 tsp dried oregano

Directions

  1. Place chicken, potatoes, onion, peppers, and garlic in slow cooker.

  2. Combine broth, tomatoes, chili powder, and oregano in a large bowl. Pour into slow cooker; stir well. Cover and cook on LOW 8-9 hrs.
