Vegetable Fettuccine

Ingredients

  • 8 oz. Fettuccine noodles
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 3 cups broccoli, cut up
  • 1 Tbsp. water
  • 1/2 tsp. salt
  • 3/4 tsp. dried basil
  • 1/4 tsp. dried oregano leaves
  • 1 tomato, cut into wedges
  • 3 Tbsp. Parmesan cheese
  • 2 Tbsp. skim milk
  • 1 Tbsp. margarine

Directions

  1. Cook fettuccine noodles as directed on package. drain and rinse in cold water. Set aside. Combine green onions, garlic, broccoli, water, salt , basil and oregano in 1-quart microwave safe casserole. Cover with casserole lid.
  2. Stirring once during cooking time, cook on high power, 3 to 4 minutes, or until vegetables are bright green. Add tomato, cheese, milk, margarine and noodles. Mix lightly; cover. Stirring once, cook on high power, 2 to 3 minutes, or until heated through.
