Bacon and Cheese Brunch Potatoes

Ingredients

  • 3 medium russet potatoes, peeled and cut into 1-inch cubes
  • 4 slices crispy cooked bacon, crumbled
  • 1 cup chopped onion
  • 4 oz shredded sharp Cheddar
  • 1/2 tsp seasoned salt
  • 1 tbsp water

Directions

  1. Coat crock pot with cooking spray. Place half of potatoes in crock pot. Sprinkle half of onion and seasoned salt over potatoes; top with half of bacon and cheese. Repeat layers, ending with cheese. Sprinkle water over top.

  2. Cover and cook on LOW 6 hrs. Stir gently to mix.
